Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Place the carrots on a tray, toss them with 1 tablespoon olive oil, a pinch of salt, and some black pepper. Roast for 25 minutes, until tender and browned at the edges.

  2. 2

While the carrots roast, cook the pearl barley in a saucepan with 400 ml chicken broth. Bring to a boil, lower the heat, partially cover, and cook for 25 to 30 minutes until tender. Drain if needed.

  3. 3

In a small bowl, mix the pistachios, rosemary, half of the chopped garlic, 1 teaspoon olive oil, and a pinch of salt. Reserve this mixture for the crust.

  4. 4

Pat the pork tenderloin dry with paper towels and season it with the remaining salt and black pepper. Brush the top with Dijon mustard.

  5. 5

Heat an oven-safe skillet with 1 tablespoon olive oil over medium-high heat. Sear the pork tenderloin for 2 minutes per side until browned. Remove the skillet from the heat, press the pistachio rosemary mixture onto the top of the pork, and transfer the skillet to the oven.

  6. 6

Roast the pork tenderloin at 220 °C / 425 °F for 12 to 16 minutes, or until cooked to a juicy doneness. Let it rest for 8 minutes before slicing.

  7. 7

For the sauce, heat a small saucepan with the butter and cook the shallot with the remaining garlic for 2 to 3 minutes over medium heat. Add the dry white wine and reduce by half.

  8. 8

Add the roasted carrots, saffron threads, and the remaining 300 ml chicken broth. Simmer for 3 minutes over low heat. Blend until smooth, then add the heavy cream and adjust with salt and black pepper.

  9. 9

Toss the cooked barley with 1 teaspoon olive oil, half of the fresh parsley, and a pinch of salt. Keep warm.

  10. 10

Slice the pork tenderloin into thick medallions. Serve over the tender barley, spoon over the carrot saffron sauce, and finish with the remaining fresh parsley on top.

Chef tips

For a crunchier crust, chop the pistachios by hand instead of processing them too finely. If you want an extra-smooth sauce, strain it after blending.

Substitutions

You can substitute the barley with brown rice if you prefer to avoid gluten. Shallots can be replaced with sweet onion, and the cream with an unsweetened plant-based alternative if you want a lighter dairy component.
