Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Place the leek pieces and the whole garlic clove on a small tray, add 1 tablespoon olive oil, a pinch of salt, and some black pepper, and roast for 15 minutes until nicely charred on the edges.

  2. 2

Meanwhile, pat the pork tenderloin dry with paper towels. Season it with the sweet paprika, half of the salt, half of the black pepper, lemon zest, and the leaves from 1 rosemary sprig finely chopped.

  3. 3

Heat a large oven-safe skillet over medium-high heat with 1 tablespoon olive oil and 10 g butter. Sear the tenderloin on all sides for 4 to 5 minutes.

  4. 4

Transfer the skillet to the oven and roast the pork at 220 °C / 425 °F for 10 to 12 minutes, or until it reaches an internal temperature of 63 °C / 145 °F. Remove it, loosely cover, and let it rest for 8 minutes.

  5. 5

While the pork rests, heat a saucepan over medium heat with 1 tablespoon olive oil. Add the 2 chopped garlic cloves and cook for 30 seconds without letting them burn. Add the cooked butter beans, 60 ml / 1/4 cup chicken broth, a pinch of salt, and 10 g butter. Cook for 4 to 5 minutes, lightly mashing some of the beans to create a creamy texture. Keep warm.

  6. 6

Pour off excess fat from the pork skillet if needed and place it over medium heat. Add the dry white wine and scrape up the browned bits. Add the roasted leek and roasted garlic, the other rosemary sprig, the remaining chicken broth, and cook for 4 minutes so it reduces slightly.

  7. 7

Remove the rosemary sprig. Blend the sauce with the heavy cream and 1 tablespoon lemon juice until smooth. If you want it extra silky, strain it. Adjust with the remaining salt and black pepper.

  8. 8

Slice the pork tenderloin into thick medallions. Spoon the creamy butter beans onto each plate, arrange the pork on top, and coat with the roasted leek sauce. Finish with chopped fresh parsley and a few drops of the remaining olive oil.

Chef tips

Do not overcook the tenderloin; resting it helps keep the juices inside. If your skillet is not oven-safe, transfer the pork to a hot baking tray before roasting.

Substitutions

You can swap the butter beans for cannellini beans or large tender white beans. The white wine can be replaced with extra chicken broth plus a teaspoon of mild vinegar at the end. The cream may be replaced with unsweetened plant-based cream, although the flavor will change slightly.
