Instructions

  1. 1

    1. Season the pork steaks with 1 tsp salt, black pepper, cumin, and annatto. Let rest for 10 minutes while you prep the vegetables.

  2. 2

    2. Heat a wide pot or Dutch oven over medium-high heat. Add the oil and sear the pork for 3 to 4 minutes per side until well browned. Remove and set aside.

  3. 3

    3. In the same pot, reduce to medium heat and cook the scallions, garlic, and bell pepper for 3 minutes. Add the tomato and cook for 5 minutes, mashing slightly to create a short hogao-style base.

  4. 4

    4. Add the chayote and yellow potatoes. Stir for 2 minutes so they absorb the flavors. Pour in the apple cider and cook for 2 minutes so it reduces slightly.

  5. 5

    5. Return the pork to the pot along with any juices. Add the water or broth and the remaining 1/2 tsp salt. Once it comes to a boil, reduce to low, cover, and cook for 35 minutes, until the pork is tender and the potatoes are cooked through.

  6. 6

    6. Meanwhile, preheat a skillet or griddle over medium heat, equivalent to a hot surface of about 350°F/175°C. Melt the butter and toast the arepa pieces for 2 to 3 minutes per side until crisp. Set aside.

  7. 7

    7. Uncover the pot and cook 5 more minutes to thicken the sauce slightly if needed. Add the lime juice and half of the cilantro. Adjust salt to taste.

  8. 8

    8. Serve the stew hot, top with the crispy arepa shards, and finish with the remaining fresh cilantro.

Chef tips

If you want a thicker sauce, mash 2 or 3 of the yellow potatoes into the stew at the end of cooking. For deeper flavor, let the seasoned pork rest for 30 minutes before searing.

Substitutions

You can replace chayote with firm zucchini, though the profile will be less traditional. Apple cider can be swapped for unsweetened apple juice plus 1 teaspoon vinegar. For a dairy-free version, toast the arepa using oil only.
