Instructions

1. In a bowl, mix the blue corn masa harina with 1 teaspoon of the salt. Gradually add the warm water and knead for 3 to 4 minutes until you have a soft dough that is moist but not sticky. Cover and let it rest for 10 minutes.
- 2
2. Heat 1 tablespoon vegetable oil in a skillet over medium heat. Add the chopped white onion and cook for 3 minutes. Stir in the chopped garlic and cook 30 seconds more.
- 3
3. Add the shredded chicken, dried oregano, ground cumin, and 1/4 teaspoon salt. Mix well and cook for 2 minutes. Pour in the mezcal and cook 2 to 3 minutes until the alcoholic aroma softens and the filling stays juicy. Remove from the heat.

4. For the sauce, heat another tablespoon of vegetable oil in a skillet or griddle over medium-high heat. Add the corn kernels, chopped tomato, and half of the roasted poblano. Cook for 6 to 8 minutes, stirring occasionally, until the corn is charred in spots and the tomato is softened.
- 5
5. Transfer the corn, tomato, and cooked half of the poblano to a blender with the Mexican crema, chicken broth, chopped fresh epazote, and 1/4 teaspoon salt. Blend until thick and smooth.
- 6
6. Return the sauce to a small saucepan and cook over medium heat for 4 to 5 minutes, stirring, until hot and lightly thickened. Adjust salt if needed.
- 7
7. Divide the dough into 8 equal portions. Roll into balls, then flatten each one between two sheets of plastic into an oval about 14 cm or 5 1/2 inches long.
- 8
8. Place 2 to 3 tablespoons of the chicken filling in the center of each piece. Fold both long sides toward the center, then close the remaining point to form a tightly sealed triangular tetela. Gently press the edges.
- 9
9. Heat a comal or large skillet over medium heat. If you want a more golden surface, lightly grease it with the remaining tablespoon of vegetable oil. Cook the tetelas for 3 to 4 minutes per side, until firm, cooked through, and marked with golden spots.
- 10
10. If you want to keep them warm, transfer them to a tray and place them in a preheated oven at 93 °C / 200 °F while you finish the rest.
- 11
11. Serve the tetelas hot with the warm charred corn sauce on top or on the side. Finish with crumbled fresh cheese, sliced red onion, the remaining roasted poblano strips, chopped fresh cilantro, and lime juice.
- 12
12. Serve immediately to enjoy the tender masa texture against the creamy sauce and the herbal touch of epazote.
Chef tips
If the dough cracks while shaping the tetelas, moisten your hands with a little warm water and seal again. For deeper flavor, char the corn well without fully burning it.
Substitutions
You can substitute the chicken with shredded turkey. If you cannot find epazote, use a small amount of extra cilantro. Fresh cheese can be replaced with crumbled panela.
