Instructions

1. Preheat the oven to 180°F / 82°C only if you want to keep the cod warm at the end; the recipe itself is not baked. Rinse and pat dry the cod loins. Check the mussels and discard any that are cracked or do not close when tapped gently.

2. In a medium saucepan, heat 1 tbsp (15 ml) olive oil over medium heat. Add half of the shallot, half of the garlic, and a pinch of salt. Sauté for 2 to 3 minutes until softened.
- 3
3. Add the pumpkin, saffron threads, and 1 cup (240 ml) of the fish stock or water. Cook over medium heat for 12 to 15 minutes, until the pumpkin is very tender.
- 4
4. Add the cream, zest of half the lemon, and a little black pepper. Blend until smooth. Adjust the salt and keep warm over very low heat.

5. In a small skillet, heat 1 tbsp (15 ml) olive oil with the butter over medium-low heat. Add the chopped pistachios, breadcrumbs, 1 tbsp parsley, and about 1 teaspoon of the remaining garlic. Cook for 3 to 4 minutes, stirring, until the crumbs are golden and crisp. Set aside.

6. In a wide pot with a lid, heat 1/2 tbsp (7 ml) olive oil over medium heat. Add the remaining shallot and cook for 2 minutes. Pour in the white wine and 1/2 cup (120 ml) of the remaining stock. When it comes to a boil, add the mussels, cover, and cook for 4 to 5 minutes until they open. Discard any that stay closed. Strain the cooking liquid and reserve 60 ml / 1/4 cup to enhance the sauce if desired.

7. Remove the mussels from their shells, leaving a few whole for garnish if you like. Toss them with 1 tbsp lemon juice, 1 tbsp parsley, and a pinch of black pepper.
- 8
8. Season the cod with the remaining salt, black pepper, and the rest of the lemon zest. Heat the final 1/2 tbsp (8 ml) olive oil in a nonstick skillet over medium-high heat. Sear the cod for 3 to 4 minutes on the first side and 2 to 3 minutes on the second side, until just cooked through and flaking easily. If desired, keep it warm in the oven at 180°F / 82°C for a few minutes.
- 9
9. If you want a lighter cream, stir 2 to 4 tbsp of the reserved mussel cooking liquid into the pumpkin cream. Do not boil vigorously so the cream does not split.
- 10
10. To plate, spoon a base of saffron pumpkin cream onto each plate. On top, build a gentle timbale with pieces of cod and mussels. Finish with the crispy pistachio crumbs, a few drops of the remaining lemon juice, and a little more fresh parsley.
- 11
11. Serve immediately, enjoying the contrast of warm cream, juicy cod, tender mussels, and crunchy topping.
Chef tips
Chop the pistachios unevenly for a more interesting texture. Do not overcook the cod; it should stay juicy and flaky. If the mussels release a lot of salinity, taste the cream before adjusting the final seasoning.
Substitutions
You can replace the pumpkin with sweet potato for a sweeter cream. The cod can be swapped for firm hake. If you do not want to use white wine, replace it with the same amount of fish stock plus a few extra drops of lemon. For a gluten-free version, use gluten-free breadcrumbs.
