Instructions

1. In a large bowl, toss the beef strips with the cornstarch, half of the salt, and the black pepper until lightly coated.
- 2
2. In a separate bowl, combine the orange juice, coffee, honey, soy sauce, apple cider vinegar, garlic, ginger, cumin, smoked paprika, red pepper flakes, and orange zest. Set this glaze mixture aside.
- 3
3. Heat a large skillet or wok over medium-high heat for 2 minutes. Add 1 tablespoon olive oil and, once hot, add half of the beef. Sear for 2 to 3 minutes per side until well browned. Remove and repeat with the remaining beef using the remaining tablespoon of oil.
- 4
4. In the same skillet, add the red onion and cook for 3 minutes, stirring, until softened and lightly colored.
- 5
5. Return all the beef to the skillet and pour in the glaze mixture. Cook over medium heat for 5 to 7 minutes, stirring often, until the sauce reduces and turns glossy, coating the beef and onion.
- 6
6. Taste and add the remaining salt if needed. Cook 1 more minute to bring the flavors together.
- 7
7. If you want to keep the beef warm before serving, place it in an oven-safe dish at 200°F / 95°C for up to 10 minutes.
- 8
8. Serve immediately, finishing with the chopped fresh parsley on top.
Chef tips
For better browning, do not overcrowd the pan and cook the beef in batches. If you want a deeper sauce, let it reduce for 1 to 2 extra minutes over medium-low heat.
Substitutions
You can substitute the sirloin with flap meat or tenderloin. Honey can be replaced with maple syrup. Parsley can be swapped for cilantro if you prefer a fresher profile.
