Chef tips
If the cake mixture feels too wet, add 1 to 2 extra tablespoons of pre-cooked cornmeal. For more flavor, let the seasoned chicken rest for 10 minutes before cooking.
Substitutions
You can swap the sweet potato for well-drained roasted squash, though the texture will be softer. White cheese can be replaced with mild feta or a firm fresh cheese. If ají dulce is unavailable, use mini sweet peppers and an extra pinch of cilantro.
