Instructions

  1. 1

Place the cassava in a pot with enough water and a pinch of salt. Cook until very tender, about 18 to 22 minutes. Drain well, remove any tough fibrous core if needed, and mash while still hot in a large bowl until you have a rustic mash. Let it cool for 5 minutes.

  2. 2

While the cassava cools slightly, mix the crumbled fresh cheese, plain thick yogurt, lime juice, lime zest, half of the chopped chives, and a pinch of salt and pepper in a small bowl. Refrigerate the cream until needed.

  3. 3

Add the corn kernels, red onion, garlic, cilantro, egg, breadcrumbs, Parmesan cheese, ground cumin, sweet paprika, remaining salt, black pepper, and olive oil to the cassava bowl. Mix until combined. If the mixture feels too wet, add a little more breadcrumbs.

  4. 4

Divide the mixture into 8 portions and shape into thick fritters, pressing firmly so they hold together.

  5. 5

Preheat the Air Fryer to 380 °F / 193 °C for 3 minutes. Lightly grease the basket or use perforated Air Fryer parchment and brush it with a little oil.

  6. 6

Arrange the fritters in a single layer, leaving space between them. Cook at 380 °F / 193 °C for 10 minutes. Carefully flip and cook for 8 more minutes at 380 °F / 193 °C, or until deeply golden and crisp outside.

  7. 7

Transfer the fritters to a plate, let them rest for 2 minutes, and finish the reserved cream with the remaining chives on top. Serve the fritters hot with the fresh cheese, lime, and chive cream on the side.

Chef tips

Drain the cassava very well so the fritters hold their shape. For an even crispier finish, lightly spray the tops with oil before cooking.

Substitutions

You can swap the fresh cheese for mild feta or well-drained ricotta. Cilantro can be replaced with parsley, and chives with finely chopped green onion tops.
