Instructions
- 1
Grate the zucchini, toss it with 1/2 teaspoon salt, and let it rest for 10 minutes. Then wrap it in a clean towel and squeeze very well to remove as much liquid as possible.
- 2
In a large bowl, mix the drained zucchini, corn kernels, green onion, all-purpose flour, egg, feta cheese, 1/2 teaspoon garlic powder, sweet paprika, black pepper, 1/2 teaspoon salt, and 1 teaspoon olive oil until you have a thick, even mixture.
- 3
In a small bowl, make the cream by mixing the Greek yogurt, lime juice and zest, chopped cilantro, the remaining 1/2 teaspoon garlic powder, and a pinch of salt. Chill until ready to serve.
- 4
Preheat the air fryer to 375°F / 190°C for 3 minutes.
- 5
Shape the mixture into 8 compact fritters, about 3 inches wide. Lightly brush both sides with the remaining olive oil.
- 6
Arrange the fritters in the air fryer basket in a single layer, leaving space between them. Cook at 375°F / 190°C for 8 minutes.
- 7
Open the basket, carefully flip each fritter, and continue cooking at 375°F / 190°C for 6 to 8 more minutes, until golden and firm.
- 8
Serve the fritters hot with the lime cilantro cream spooned over the top or on the side for dipping.
Chef tips
Squeezing the zucchini very well is the key to crisp fritters that hold together. If your corn is wet, pat it dry before mixing.
Substitutions
You can swap the feta for crumbled goat cheese. Cilantro can be replaced with parsley. For a gluten-free version, use a gluten-free flour blend in the same amount.
