Instructions
- 1
1. In a large bowl, mix the grated taro, corn kernels, pre-cooked cornmeal, beaten egg, grated white cheese, half of the chopped onion, half of the sweet pepper, 1 minced garlic clove, half of the cilantro, 1 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon cumin. Mix well until you have a moist but shapeable batter.
- 2
2. Let the fritter mixture rest for 10 minutes so the cornmeal can absorb some of the moisture from the taro.
- 3
3. Meanwhile, make the bean topping. Heat 2 tablespoons vegetable oil in a skillet over medium heat. Add the remaining onion, remaining sweet pepper, and 2 garlic cloves. Sauté for 4 to 5 minutes until fragrant and softened.
- 4
4. Add the diced tomato, remaining cumin, 1/2 teaspoon salt, and the rest of the black pepper. Cook for 3 minutes, stirring, until the tomato softens.
- 5
5. Add the cooked red beans, grated panela, and vegetable broth or water. Cook over medium-low heat for 10 to 12 minutes, lightly mashing a small portion of the beans to thicken the mixture. Adjust salt to taste and keep warm.
- 6
6. For the cream, place the avocado, plain yogurt, lime juice, remaining cilantro, a pinch of salt, and 1 tablespoon water in a blender or food processor. Blend until smooth. If you want it looser, add the remaining tablespoon of water. Set aside.
- 7
7. Heat a large skillet or griddle over medium heat with the remaining 2 tablespoons vegetable oil. Shape the taro mixture into 8 fritters, using about 1/2 cup per piece, and flatten them slightly.
- 8
8. Cook the fritters for 4 to 5 minutes per side, until deeply golden and cooked through. If you prefer to finish them in the oven, transfer them to a tray and bake for 5 minutes at 375°F / 190°C after the initial sear.
- 9
9. Serve two fritters per portion. Top or accompany them with a generous spoonful of the red bean mixture and finish with the avocado cream on top or on the side.
- 10
10. Serve immediately while hot to enjoy the contrast between the crisp fritters, silky beans, and fresh cream.
Chef tips
Grate the taro on the coarse side of a grater and squeeze it lightly only if it releases too much liquid. If the mixture feels too wet, add 1 or 2 extra tablespoons of pre-cooked cornmeal. For the best flavor, let the fritters brown well before flipping.
Substitutions
You can substitute the red beans with cooked black beans. The yogurt can be replaced with thick sour cream, and the white cheese with mild feta or firm queso fresco. If you cannot find taro, use malanga or a similar root.
