Instructions

1. Toast the bread slices until golden and crisp. If using an oven or toaster with a temperature setting, toast at 200 °C / 400 °F for 3 to 4 minutes, watching carefully so they do not burn.
- 2
2. In a bowl, mash the avocado with 1 tablespoon lemon juice, the lemon zest, half of the olive oil, salt, and black pepper until creamy but still slightly textured.
- 3
3. Toss the cucumber with the mint, honey, and 1 additional teaspoon of lemon juice for a fresh topping. Set aside.
- 4
4. Heat a nonstick skillet over medium-high heat. Add the remaining olive oil and sear the halloumi for 1 to 2 minutes per side, until deeply golden outside and tender inside.
- 5
5. Spread the avocado mixture over each toast. Top with the warm halloumi slices, then add the minty cucumber.
- 6
6. Finish with red pepper flakes and a few extra drops of lemon juice to taste. Serve immediately to keep the contrast between crisp bread, creamy avocado, and golden halloumi.
Chef tips
For extra crisp texture, pat the halloumi dry before searing. If the avocado is very ripe, add the lemon gradually to control the consistency.
Substitutions
You can swap the mint for basil or dill. If you do not have halloumi, use firm panela-style cheese or grilling cheese. For a non-spicy version, omit the red pepper flakes.
