1. Preheat a skillet or griddle over medium-high heat for 1 minute. If you prefer using the oven, preheat it to 220 °C / 425 °F.
- 2
2. In a medium bowl, toss the zucchini ribbons with 10 ml (2 tsp) olive oil, 10 ml (2 tsp) lemon juice, half of the lemon zest, 1 g salt, and black pepper. Mix well and let marinate for 5 minutes while you prepare the rest.
- 3
3. In a small bowl, combine the honey and chili flakes, then set aside.
- 4
4. Place the burrata in another bowl and gently open it with a spoon. Add 10 ml (2 tsp) olive oil, the remaining lemon zest, and a pinch of salt. Mix very gently just to make it slightly creamy without fully breaking it down.
- 5
5. Toast the bread slices in the skillet for 2 minutes per side, or in the oven at 220 °C / 425 °F for 3 to 4 minutes total, until golden and crisp at the edges.
- 6
6. Spread the seasoned burrata over the warm toasts.
- 7
7. Lightly drain the marinated zucchini with tongs and place it over the burrata in soft folds.
- 8
8. Finish each toast with the chopped pistachios, hot honey, and fresh mint leaves. Serve immediately.
Chef tips
For more pliable zucchini ribbons, slice them very thin with a vegetable peeler. If the honey is thick, warm it for 5 to 10 seconds so it mixes more easily with the chili.
Substitutions
You can swap burrata for well-drained fresh mozzarella or creamy ricotta. Pistachios can be replaced with toasted sunflower seeds if you need to avoid tree nuts.
