Instructions

  1. 1

    1. Toast the 4 slices of rustic bread in a toaster or in a skillet over medium heat until golden and crisp. If using the oven, toast at 220 °C / 425 °F for 3 to 4 minutes.

  2. 2

    2. Heat a skillet with 2 teaspoons of the olive oil over medium-high heat. Add the sweet corn, a pinch of the salt, and the black pepper, and sauté for 3 minutes until lightly charred in spots.

  3. 3

    3. Add the pumpkin seeds to the skillet with the corn and toast for 1 more minute, stirring constantly so they do not burn. Remove from the heat.

  4. 4

    4. In a small bowl, whip the drained burrata with the remaining salt, the finely grated lime zest, 1 tablespoon of the lime juice, the honey, and the remaining olive oil until creamy and spreadable.

  5. 5

    5. Spread the whipped burrata over the warm toasts. Spoon the sautéed corn and pumpkin seed mixture on top.

  6. 6

    6. Finish each toast with the fresh basil, the remaining lime juice, and the red pepper flakes. Serve immediately.

  7. 7

    7. For a warmer finish, you can place the assembled toasts in a preheated oven at 180 °C / 350 °F for 1 minute before serving.

Chef tips

For a lighter texture, whip the burrata vigorously with a fork or with an immersion blender for 20 to 30 seconds. Pat the corn dry if it was frozen so it browns quickly instead of steaming.

Substitutions

You can swap the burrata for well-drained fresh mozzarella or creamy ricotta. Basil can be replaced with mint or cilantro. Honey may be replaced with agave syrup, though the flavor will shift slightly.
