Instructions

  1. 1

    1. Heat a skillet or griddle over medium heat, about 350 °F / 175 °C surface temperature. Brush the bread slices with olive oil and toast for 2 minutes per side until golden and crisp.

  2. 2

    2. While the bread toasts, mix the cottage cheese with 2 teaspoons (10 ml) of the lemon juice, a pinch of lemon zest, the salt, and black pepper.

  3. 3

    3. Thinly slice the radishes and the half green apple. Toss both with the chopped fresh dill and 1 additional teaspoon (5 ml) of lemon juice to keep the apple fresh and bright.

  4. 4

    4. Add the walnuts to the same skillet and toast for 1 minute over medium heat, around 350 °F / 175 °C, stirring constantly so they do not burn.

  5. 5

    5. Spread the cottage cheese mixture generously over the warm toast. Arrange the radish and apple slices on top, then add the toasted walnuts.

  6. 6

    6. Finish each toast with honey and a little extra dill if desired. Serve immediately to enjoy the contrast of crisp, creamy, and fresh textures.

Chef tips

For a smoother spread, lightly mash the cottage cheese with a fork or blend it briefly with an immersion blender. Slice the apple at the last moment to keep its color and crunch.

Substitutions

You can swap the walnuts for sunflower seeds if you want to avoid tree nuts, though the allergen profile will change. Dill can be replaced with chives or parsley, and honey with maple syrup for a no-honey version.
