1. Toast the sesame seeds in a small skillet over medium heat for 1 to 2 minutes, stirring, until fragrant. Remove and set aside.
- 2
2. In the same skillet or in a toaster, toast the bread slices until golden and crisp. If using an oven or toaster oven with temperature control, toast at 200 °C / 400 °F for 3 to 4 minutes.
- 3
3. In a small bowl, mash the avocado with the tahini, 1 tablespoon lemon juice, 1 teaspoon olive oil, the honey, 1/4 teaspoon salt, and black pepper until thick and spreadable.
- 4
4. In another bowl, lightly mash the edamame with the remaining 1 tablespoon lemon juice, the remaining 1 teaspoon olive oil, and 1/4 teaspoon salt. It should stay rustic, not completely pureed.
- 5
5. Spread the avocado-tahini cream over the warm toasts. Evenly spoon the smashed edamame on top.
- 6
6. Arrange the cucumber slices over each toast. Finish with fresh cilantro, toasted sesame, and a pinch of red pepper flakes if you want a little heat.
- 7
7. Serve immediately to keep the contrast between the crisp bread, creamy topping, and fresh cucumber.
Chef tips
For extra crunch, toast the bread on both sides and let it rest for 30 seconds before spreading the cream. If the avocado is still a bit firm, mash it first with the lemon juice alone.
Substitutions
You can swap the cilantro for mint or parsley. The honey can be omitted or replaced with maple syrup. If you do not have edamame, use cooked peas, though the flavor will be different.
