Instructions

  1. 1

    1. Toast the bread slices in a skillet, toaster, or under the oven broiler until golden and crisp. If using the oven, toast at 220 °C / 425 °F for 3 minutes.

  2. 2

    2. Meanwhile, place the white beans, Greek yogurt, 1 tbsp / 15 ml olive oil, 2 tsp / 10 ml lemon juice, salt, and black pepper in a bowl. Blend or mash היט with a fork until thick and spreadable.

  3. 3

    3. Using a vegetable peeler, shave the zucchini into thin ribbons. Toss them in another bowl with 1/2 tbsp / 7 ml olive oil, the lemon zest, and the red pepper flakes if using.

  4. 4

    4. Spread a generous layer of the white bean cream over each warm toast.

  5. 5

    5. Top with the zucchini ribbons, toasted hazelnuts, and chopped chives.

  6. 6

    6. Finish with a few extra drops of olive oil, then taste and adjust salt or pepper if needed. Serve immediately.

Chef tips

For a smoother texture, blend the bean cream with a small blender. If you want more contrast, chill the zucchini for 2 minutes before assembling the toasts.

Substitutions

You can swap the Greek yogurt for thick plant-based yogurt for a dairy-free version, and replace hazelnuts with sunflower seeds if you prefer to avoid tree nuts. Chives can be replaced with parsley or dill.
