Instructions
- 1
Toast the bread slices in a skillet, toaster, or under the oven broiler until golden and crisp. If using the oven, preheat it to 220 °C / 425 °F and toast the bread for 3 minutes.
- 2
In a small processor or with an immersion blender, blend the edamame with the cream cheese, 1 tablespoon (15 ml) olive oil, 2 tablespoons (30 ml) lemon juice, the lemon zest, salt, and black pepper until thick and spreadable.
- 3
In a bowl, toss the shredded carrot with the remaining 1 tablespoon (15 ml) olive oil so it looks glossy and lightly dressed.
- 4
Spread the edamame cream generously over each warm toast.
- 5
Top with the shredded carrot, drizzle with sweet chili sauce, and finish with black sesame seeds and chopped chives.
- 6
Serve immediately to keep the contrast between the crisp bread, creamy spread, and fresh carrot.
Chef tips
For a smoother texture, add 1 or 2 teaspoons of water while blending the edamame cream. You can also rub the hot toast lightly with lemon to boost the citrus aroma.
Substitutions
You can swap the cream cheese for thick ricotta or a spreadable plant-based alternative. Chives can be replaced with parsley or mild cilantro, and black sesame can be swapped for toasted white sesame.
