1. Toast the bread slices in a skillet or toaster until golden and crisp. If using a skillet, heat it over medium heat, about 350°F / 175°C surface temperature, and toast the bread for 1 to 2 minutes per side.
- 2
2. In a small bowl, toss the cherries with the lemon juice, 1 teaspoon olive oil, half of the zaatar, a pinch of salt, and the black pepper. Stir gently for 1 minute so everything is well coated.
- 3
3. Spread the labneh evenly over each toast.
- 4
4. Arrange the cucumber on top, then spoon over the dressed cherries.
- 5
5. Finish with the toasted pistachios, fresh mint, the remaining zaatar, and the rest of the olive oil.
- 6
6. Drizzle with honey if you want a sweeter contrast. Serve immediately to keep the bread crisp.
Chef tips
For extra crunch, toast the bread a little longer and let it cool for 1 minute before spreading the labneh. If the cherries are very ripe, toss them gently so they do not break down too much.
Substitutions
You can swap the labneh for thick Greek yogurt or whipped cream cheese. The cherries can be replaced with halved red grapes, and the pistachios with walnuts or sunflower seeds if you prefer to avoid tree nuts.
