Instructions
- 1
Toast the walnuts in a small skillet over medium heat for 2 minutes, stirring constantly, until fragrant. Remove and set aside.
- 2
Toast the bread slices in the same skillet with 1 tablespoon of olive oil over medium heat for 1 to 2 minutes per side until golden and crisp. If using an oven or toaster, heat to 400 °F / 200 °C and toast until golden.
- 3
In a bowl, mix the grated Manchego, Greek yogurt, Dijon mustard, 1 teaspoon lemon juice, 1/2 tablespoon olive oil, a pinch of salt, and black pepper until you have a thick, spreadable cream.
- 4
In another bowl, combine the arugula with the sliced green apple, the remaining lemon juice, the remaining olive oil, and a pinch of salt. Toss gently so the apple is lightly coated.
- 5
Spread the Manchego cream generously over the warm toasts.
- 6
Top with the arugula and apple mixture. Add the toasted walnuts and finish with a drizzle of honey.
- 7
Serve immediately to keep the contrast between the crisp bread, smooth cream, and fresh topping.
Chef tips
For extra-thin apple slices, use a mandoline or a very sharp knife. If your Manchego is more aged, grate it finely and mix a little longer for a smoother texture.
Substitutions
You can swap Manchego for another mild aged cheese, Greek yogurt for plain cream cheese, and arugula for lamb's lettuce. Honey can be replaced with maple syrup for a different sweet note.
