Instructions
- 1
Toast the bread slices in a toaster or in a skillet over medium heat until golden and crisp. If using the oven, toast at 220 °C / 425 °F for 3 to 4 minutes.
- 2
In a small bowl, mash the feta with the Greek yogurt, 1 tablespoon olive oil, lemon zest, 2 teaspoons lemon juice, and black pepper until smooth and spreadable. You can also blend it in a small processor.
- 3
Heat a small skillet over medium heat and add the pumpkin seeds, ground cumin, and a pinch of salt. Toast for 1 to 2 minutes, stirring, until the pepitas begin to pop and smell fragrant. Remove from the heat.
- 4
In the same skillet or in a small bowl, stir the honey with the chili flakes and let it sit for 1 minute to infuse.
- 5
Spread the whipped feta generously over each toast. Arrange the persimmon slices on top.
- 6
Finish with the cumin pepitas, chili honey, fresh mint, and the remaining olive oil drizzled over the top. Serve immediately.
Chef tips
For a smoother texture, let the feta sit at room temperature for 10 minutes before whipping. The persimmon should be firm so it can be sliced thinly without falling apart.
Substitutions
You can swap the persimmon for firm pear or slightly underripe mango. Mint can be replaced with basil. If you do not want heat, leave out the chili flakes and use plain honey.
