Instructions
- 1
Toast the bread slices in a toaster or in a large skillet over medium heat with 5 ml olive oil until golden and crisp on both sides, about 2-3 minutes per side. If using the oven, toast them at 220 °C / 425 °F for 4-5 minutes.
- 2
In a small skillet over medium heat, cook the serrano ham for 1-2 minutes per side until crisp. Transfer to a plate and let it cool slightly, then break it into pieces.
- 3
In the same skillet, add the walnuts and toast for 1 minute over medium heat, stirring constantly. Toss them with the lemon zest, lemon juice, and a pinch of black pepper.
- 4
Spread the labneh evenly over the still-warm toasts.
- 5
Arrange the fresh plum slices over the labneh, then add the crispy ham pieces and the lemony walnuts.
- 6
Finish with the honey, fresh thyme leaves, the remaining olive oil, and a small pinch of salt if needed. Serve immediately.
Chef tips
For the best texture, slice the plum just before assembling so it does not release too much juice. If the bread is thick, toast it a bit longer so it holds the topping well.
Substitutions
You can swap the labneh for thick strained Greek yogurt or cream cheese. Serrano ham can be replaced with prosciutto. If you do not have plum, use a firm nectarine. For a gluten-free version, use gluten-free bread.
