Instructions
- 1
Toast the rustic bread slices in a skillet, toaster, or under the broiler until golden and crisp, about 2 to 3 minutes per side in a skillet over medium heat, or under a preheated broiler at 400°F / 200°C. Set aside.
- 2
In a small skillet, toast the pumpkin seeds with 1 teaspoon olive oil and the red chili flakes over medium heat for 2 minutes, stirring, until they start to crisp. Add 1 teaspoon honey, stir for 15 seconds, remove from the heat, and let cool slightly.
- 3
In a bowl, whip the goat cheese with the Greek yogurt, lemon juice, 1 teaspoon olive oil, a pinch of salt, and the black pepper until light and spreadable.
- 4
Gently toss the cucumber with the apricot, the remaining 1 teaspoon honey, a pinch of salt, and a few drops of olive oil to lightly coat.
- 5
Spread the whipped goat cheese mixture over the toasts. Arrange the cucumber ribbons and apricot slices on top.
- 6
Finish each toast with the chili pumpkin seeds and fresh mint leaves. Serve immediately to keep the creamy-crunchy contrast.
Chef tips
For extra contrast, chill the cucumber and apricot for a few minutes before assembling. For an even fluffier texture, whip the goat cheese with a fork for 1 extra minute.
Substitutions
You can swap the apricot for firm peach or plum, and the mint for basil. If you do not have Greek yogurt, use a small amount of cream cheese, keeping in mind the flavor will be milder.
