Instructions

  1. 1

    1. Toast the sunflower seeds in a small skillet over medium heat for 2 minutes, stirring constantly, until fragrant. Remove and mix with a pinch of salt and 1/4 teaspoon ground cumin.

  2. 2

    2. In the same skillet, add 1/2 tablespoon olive oil and toast the bread slices for 1 to 2 minutes per side, until golden and crisp around the edges. If using an oven or toaster instead, heat it to 400 °F / 200 °C and toast the bread briefly until golden.

  3. 3

    3. In a bowl, whip the goat cheese with the Greek yogurt, lemon zest, 1 teaspoon lemon juice, a pinch of salt, and black pepper until smooth and spreadable.

  4. 4

    4. In another bowl, toss the carrot ribbons with the chopped dates, the remaining 1/2 tablespoon olive oil, 1 teaspoon lemon juice, honey, the remaining 1/4 teaspoon cumin, parsley, and a pinch of salt. Mix gently so the carrot ribbons keep their shape.

  5. 5

    5. Spread the whipped goat cheese generously over the warm toasts. Divide the carrot and date salad on top.

  6. 6

    6. Finish with the toasted sunflower seeds and a little more black pepper. Serve immediately.

Chef tips

For a lighter texture, whip the goat cheese with a fork for 1 minute before adding the yogurt. The carrot ribbons look best when shaved into long, thin strips with a vegetable peeler.

Substitutions

You can swap the goat cheese for thick ricotta or cream cheese, though the flavor profile will change. Parsley can be replaced with mint or chives. Sunflower seeds can be swapped for pumpkin seeds if preferred.
