Instructions

  1. 1

    1. Toast the bread slices in a skillet, toaster, or under the oven broiler until golden. If using the oven, broil or bake at 220 °C / 425 °F for 3 to 5 minutes, watching closely so they do not burn.

  2. 2

    2. Place the cottage cheese in a small blender or food processor and blend with 2 teaspoons of the olive oil, the lemon zest, lemon juice, a pinch of salt, and black pepper until thick and spreadable.

  3. 3

    3. Heat a skillet over medium heat and add the walnuts. Toast for 1 minute, stirring constantly, until fragrant. Remove and set aside.

  4. 4

    4. In the same skillet, add the remaining olive oil, grapes, chopped rosemary, and honey. Cook over medium heat for 2 to 3 minutes, stirring, until the grapes are warmed through, glossy, and a few begin to lightly burst. Add a small pinch of salt.

  5. 5

    5. Spread the whipped cottage cheese generously over each toast. Spoon the sautéed grapes and their juices on top, then finish with the toasted walnuts.

  6. 6

    6. Add a little more black pepper to finish and serve immediately.

Chef tips

For a smoother texture, blend the cottage cheese for 1 extra minute. If the grapes are very large, quarter them so they sit better on the toast.

Substitutions

You can substitute the walnuts with pecans or almonds if you want a different flavor. Cottage cheese can be replaced with ricotta, though the final texture will be slightly different. Fresh rosemary can be swapped for fresh thyme.
