Instructions

  1. 1

    1. In a bowl, mix the ricotta with the lemon zest, 15 ml (1 tbsp) lemon juice, 1 tablespoon olive oil, 1/2 teaspoon salt, and black pepper until smooth and creamy.

  2. 2

    2. In a small bowl, combine the honey with the red pepper flakes and set aside so the flavors can infuse while you prepare the rest.

  3. 3

    3. Heat a large skillet over medium heat, about 350°F / 175°C surface temperature. Add the pumpkin seeds and sesame seeds and toast for 1 to 2 minutes, stirring, until nutty and fragrant. Transfer to a plate.

  4. 4

    4. In the same skillet, add 1 tablespoon olive oil and sauté the squash ribbons with 1/4 teaspoon salt for 1 to 2 minutes over medium heat, about 350°F / 175°C, just until slightly tender but still fresh. Remove from the heat.

  5. 5

    5. Toast the bread slices in a toaster or skillet until golden and crisp. If using an oven or broiler, toast at 400°F / 200°C for 2 to 3 minutes, watching carefully so they do not burn.

  6. 6

    6. Spread each toast with a generous layer of lemon ricotta. Arrange the warm squash ribbons on top.

  7. 7

    7. Drizzle each toast with the hot honey, sprinkle with the toasted seed mixture, and finish with chopped mint. Serve immediately.

Chef tips

For elegant squash ribbons that cook quickly, use a wide vegetable peeler. If the ricotta is very firm, whip it 30 seconds longer for a lighter texture.

Substitutions

You can swap the ricotta for whipped cottage cheese or soft cream cheese. Mint can be replaced with basil. If you do not have summer squash, use thin green zucchini ribbons instead.
