Instructions

1. Toast the sliced almonds in a small skillet over medium heat for 2 minutes, stirring constantly, until golden and fragrant. Remove from the pan so they do not burn.
- 2
2. In a small bowl, mix the ricotta with the lemon zest, lemon juice, 1 teaspoon (5 ml) olive oil, half of the salt, and a little black pepper until smooth and creamy.
- 3
3. Place the green grapes in a bowl and gently press them with a fork to split them slightly without turning them into puree. Toss with the shaved fennel, honey, the remaining 1 teaspoon (5 ml) olive oil, the rest of the salt, and the fresh mint.

4. Toast the bread slices in a skillet, toaster, or under the oven broiler until golden and crisp. If using the oven, preheat it to 220 °C / 425 °F and toast the bread for 3 to 4 minutes.
- 5
5. Spread the lemon ricotta over each toast. Spoon the grape and fennel mixture on top, letting some of the juices fall onto the ricotta.
- 6
6. Finish with the toasted almonds and a little extra black pepper. Serve immediately.
Chef tips
For a more delicate texture, shave the fennel with a mandoline. If the grapes are very large, cut them into quarters before lightly crushing them.
Substitutions
You can swap ricotta for whipped cottage cheese or soft cream cheese. Mint can be replaced with dill or basil. If you do not have sliced almonds, use toasted hazelnuts, keeping in mind the allergen change.
