1. Toast the bread slices in a skillet over medium heat with 1/2 tablespoon olive oil for 2 minutes per side, until golden and crisp. If using an oven or toaster, preheat the oven to 400°F (200°C) and toast for 4 to 5 minutes.
- 2
2. In a bowl, mix the ricotta with the lime zest, 2 tablespoons (30 ml) lime juice, honey, salt, and black pepper until creamy and spreadable.
- 3
3. In a separate bowl, combine the mango with the remaining 1/2 tablespoon olive oil, chili flakes, half of the mint, and an extra pinch of salt. Toss gently so the mango keeps its shape.
- 4
4. Spread the lime ricotta over the warm toasts.
- 5
5. Top with the mango mixture, sprinkle with sesame seeds, and finish with the remaining mint. Drizzle with a little extra honey if desired.
- 6
6. Serve immediately to keep the contrast between the crisp bread, creamy ricotta, and fresh mango.
Chef tips
For a lighter texture, whisk the ricotta for 30 seconds with a fork or small whisk before mixing. Use firm mango so it does not make the bread soggy.
Substitutions
You can swap ricotta for whipped cottage cheese or creamy fresh cheese. Mint can be replaced with basil, and honey with agave syrup if you want a strictly vegetarian version without honey.
