Instructions
- 1
Preheat a skillet or griddle over medium heat, about 180 °C / 350 °F surface temperature.
- 2
Brush the 4 rustic bread slices with half of the olive oil and toast them in the skillet for 1 to 2 minutes per side, until golden and crisp. Remove and set aside.
- 3
In a bowl, combine the ricotta with the lemon zest, 2 teaspoons lemon juice, honey, half of the salt, and a little black pepper. Beat with a spoon or fork until light and creamy.
- 4
Place the cucumber in a small bowl and dress it with the remaining olive oil, the rest of the salt, and a few more grinds of black pepper. Toss well.
- 5
Spread a generous layer of whipped ricotta over each toast.
- 6
Arrange the cucumber slices and fig wedges over the ricotta.
- 7
Finish with the chopped pistachios, fresh mint, and, if desired, an extra drizzle of honey on top. Serve immediately.
Chef tips
For a lighter texture, whip the ricotta for 1 extra minute. If the figs are very ripe, add them at the very end so they hold their shape.
Substitutions
You can swap the figs for firm pear or halved grapes. Ricotta can be replaced with well-drained cottage cheese or whipped cream cheese, though the texture will change.
