1. Toast the bread slices in a toaster or in a dry skillet until golden and crisp. If using the oven, toast at 220 °C / 425 °F for 3 to 5 minutes.
- 2
2. In a small bowl, mix the Greek yogurt with the lemon zest, lemon juice, 1 tablespoon olive oil, salt, and black pepper until smooth and creamy.
- 3
3. Heat a skillet over medium heat. Add the remaining tablespoon of olive oil and the cherry tomatoes. Cook for 2 to 3 minutes, stirring, until warm and just starting to burst.
- 4
4. Add the chopped green olives to the skillet, stir for 30 seconds, and remove from the heat.
- 5
5. In the same still-warm skillet, toast the sesame seeds with the chopped pistachios and ground cumin for 30 to 60 seconds, stirring constantly, until fragrant. This is your quick dukkah.
- 6
6. Spread the yogurt mixture over each toast. Spoon the warm cherry tomatoes and olives on top.
- 7
7. Finish with the pistachio-sesame dukkah, chopped fresh mint, and, if desired, a light drizzle of honey. Serve immediately.
Chef tips
For a thicker texture, strain the yogurt for 5 minutes in a fine sieve before mixing. Do not overcook the tomatoes; they should stay juicy, not turn into sauce.
Substitutions
You can use whole grain or sourdough bread instead of rustic bread. Mint can be replaced with parsley or basil. If you do not want honey, simply leave it out.
