Instructions
- 1
1. Toast the 4 small slices of whole grain bread in a dry skillet over medium heat for 2 minutes per side, or in a preheated oven at 200 °C / 400 °F for 4 minutes, until golden and crisp.
- 2
2. In a small bowl, mash the cooked peas with the Greek yogurt, 1 teaspoon of the olive oil, lemon juice, salt, and black pepper until you get a rustic but spreadable mixture.
- 3
3. Slice the green apple very thinly and toss it with the remaining teaspoon of olive oil to give it shine and help prevent quick browning.
- 4
4. Spread the pea mixture over each toast.
- 5
5. Arrange the green apple slices and shaved aged cheddar on top.
- 6
6. Add small dollops of sweet mustard to each toast and finish with the chopped fresh chives.
- 7
7. Serve immediately to keep the contrast between the crisp bread, creamy spread, and fresh apple.
Chef tips
For a smoother texture, mash the pea spread thoroughly with a fork or pulse it in a mini chopper for a few seconds. Use a tart apple to balance the cheese.
Substitutions
You can swap the cheddar for semi-cured Manchego or aged Gouda. Chives can be replaced with parsley or dill. If you do not have sweet mustard, mix mild mustard with a small amount of honey.
