1. In a small bowl, combine the feta cheese, Greek yogurt, lemon zest, 1 tablespoon olive oil, black pepper, and salt. Blend or mash until you have a thick, spreadable cream.
- 2
2. Heat a skillet or griddle over medium-high heat for 1 minute, roughly 400°F / 200°C at the surface. Add 1/2 tablespoon olive oil and toast the bread slices for 1 to 2 minutes per side until crisp. Remove.
- 3
3. In the same hot skillet, add the nectarines and cook for 1 to 2 minutes per side so they lightly char and soften slightly. Add the honey during the last minute so they glaze gently without burning.
- 4
4. Toast the sesame seeds in the empty skillet for 30 to 45 seconds over medium heat, about 350°F / 175°C at the surface, until fragrant. Remove immediately.
- 5
5. Spread each toast with the whipped feta cream. Top with 2 or 3 pieces of warm nectarine.
- 6
6. Finish with fresh basil, toasted sesame seeds, and an optional drizzle of honey. Serve right away.
Chef tips
For a lighter texture, whip the feta mixture with a hand blender for 30 seconds. The nectarines should be firm so they hold their shape in the skillet.
Substitutions
You can swap the nectarine for firm plum or apricot. Basil can be replaced with mint. For a gluten-free version, use gluten-free bread.
