Instructions
- 1
Preheat a large skillet over medium heat, or if using the oven, preheat it to 220 °C / 425 °F.
- 2
Arrange the baguette slices, brush them with half of the olive oil, and toast them in the skillet for 1 to 2 minutes per side, or in the oven for 4 to 5 minutes at 220 °C / 425 °F, until golden and crisp.
- 3
In a bowl, combine the ricotta with the lemon zest, 15 ml / 1 tbsp lemon juice, salt, and half of the black pepper until lightly creamy.
- 4
Place the Serrano ham in the hot skillet without extra oil and cook for 1 to 2 minutes per side, or until slightly crisp. Remove and break into small pieces.
- 5
In a small bowl, stir the honey with the chopped fresh rosemary and let it sit for 1 minute to infuse.
- 6
Spread each toast with the lemon ricotta. Top with the fresh fig wedges and the crispy ham pieces.
- 7
Finish with the chopped pistachios, the remaining black pepper, and a few drops of the remaining olive oil. Drizzle the rosemary honey over the top just before serving.
Chef tips
If the figs are very ripe, cut them right before assembling so they hold their shape better. For a brighter finish, lightly rub the hot toasts with a cut side of the lemon before adding the ricotta.
Substitutions
You can substitute the Serrano ham with crispy prosciutto. Pistachios can be replaced with walnuts or almonds if preferred. If you do not have fresh rosemary, use a very small pinch of dried rosemary.
