Instructions
- 1
In a small bowl, mix the ricotta with the finely chopped basil, lemon zest, lemon juice, 1 tablespoon olive oil, half of the salt, and a little black pepper until light and creamy.
- 2
In another small bowl, combine the honey and red pepper flakes to make a quick spicy honey.
- 3
Heat a large skillet over medium-high heat for 1 minute. Add the remaining 1/2 tablespoon olive oil and the grapes. Cook for 3 to 4 minutes, shaking the pan, until some grapes blister and lightly burst. Season with the remaining salt.
- 4
Toast the bread slices in a toaster or in a clean skillet for 1 to 2 minutes per side until golden and crisp. If you prefer to use the oven, toast at 400°F / 200°C for 3 to 4 minutes.
- 5
Spread each toast with a layer of basil ricotta. Spoon the warm grapes over the top.
- 6
Finish with a drizzle of spicy honey on each toast and add a little more black pepper. Garnish with small basil leaves if desired and serve immediately.
Chef tips
For a fluffier texture, whip the ricotta for 30 seconds with a fork or small whisk before mixing. Serve the grapes straight from the skillet for the best contrast.
Substitutions
You can swap the ricotta for soft goat cheese for a bolder flavor. Red grapes can be replaced with black grapes or halved cherries. Basil can be replaced with fresh mint.
