Instructions
- 1
Toast the 8 slices of rustic bread in a large skillet or toaster until golden and crisp around the edges. If using the oven, toast at 220 °C / 425 °F for 3 to 4 minutes.
- 2
In a small bowl, mix the Greek yogurt with 1 teaspoon lemon juice, 1 teaspoon lemon zest, the pinch of salt, and a little black pepper until smooth and creamy.
- 3
Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the pitted cherries and honey, and sauté for 1 to 2 minutes until slightly softened and glossy, but not falling apart. Transfer to a plate.
- 4
In the same skillet, add the remaining tablespoon of olive oil and sear the halloumi slices for 1 to 2 minutes per side, until deeply golden.
- 5
Spread each toast with about 1 tablespoon of the lemon yogurt. Top with one slice of golden halloumi and divide the sautéed cherries over the toasts.
- 6
Finish with the toasted pistachios, chopped mint, a little more black pepper, and, if desired, a very light drizzle of honey. Serve immediately.
Chef tips
For the best texture, pat the halloumi dry with paper towels before searing. If the cherries are very sweet, add a few extra drops of lemon juice for balance.
Substitutions
You can swap the mint for basil. If you do not have pistachios, use toasted sunflower seeds instead; in that case, remove the tree nut allergen. Greek yogurt can be replaced with thick plain yogurt.
