Instructions

  1. 1

    1. In a large bowl, mix the bread flour, sugar, salt, and instant dry yeast.

  2. 2

    2. Add the warm whole milk and 1 egg. Mix until a rough dough forms. Incorporate the 70 g softened unsalted butter and knead for 10 to 12 minutes until the dough is smooth, elastic, and slightly glossy.

  3. 3

    3. Shape into a ball, place in a clean bowl, cover, and let rise for 75 to 90 minutes in a warm spot until nearly doubled in size.

  4. 4

    4. While the dough rises, preheat the oven to 400°F / 200°C. Place the seedless white grapes on a small tray, toss them with 15 g (about 2 tsp) of the honey, and roast for 12 to 15 minutes until juicy and lightly browned. Let cool completely.

  5. 5

    5. In a small bowl, mix the melted unsalted butter with the remaining honey, chopped fresh sage, and ground cinnamon to make a fragrant butter filling.

  6. 6

    6. Grease a baking tray with the 10 g unsalted butter or line it with parchment and rub the butter over it.

  7. 7

    7. Deflate the dough and transfer it to a work surface dusted with the all-purpose flour. Roll it into a rectangle about 16 x 12 inches / 40 x 30 cm.

  8. 8

    8. Spread the honey-sage butter over the dough, covering almost the entire surface. Scatter the cooled roasted grapes and chopped walnuts over the top.

  9. 9

    9. Roll the dough up from the long side into a firm log. Using a sharp knife, cut the log lengthwise to expose the filling layers.

  10. 10

    10. Braid the two strands with the cut sides facing up and pinch the ends together to form one long braid. Transfer it to the prepared tray.

  11. 11

    11. Cover and proof the braid again for 30 to 40 minutes, until puffy.

  12. 12

    12. Lower the oven temperature to 375°F / 190°C. Brush the braid with the beaten egg.

  13. 13

    13. Bake for 30 to 35 minutes at 375°F / 190°C, rotating the tray halfway through, until the braid is deeply golden and fully baked inside.

  14. 14

    14. Let rest for 15 minutes before slicing and serving.

Chef tips

Toast the walnuts for 5 minutes at 325°F / 165°C to deepen their flavor before adding them to the filling. If the grapes release too much juice, drain them lightly before placing them on the dough to keep the braid from opening too much.

Substitutions

You can substitute the sage with a smaller amount of fresh thyme. Walnuts can be replaced with pecans for a sweeter flavor. Whole milk may be swapped for reduced-fat milk, though the crumb will be slightly less rich.
