Instructions
- 1
Separate and wash the 8 romaine leaves, dry them very well, and set them aside as cups.
- 2
Heat a small skillet over medium-high heat for 1 minute. Add 1/2 tbsp (7 ml) olive oil and the corn. Cook for 3 to 4 minutes, stirring, until it develops golden spots and a toasted aroma. If you prefer to use an oven or air fryer, toast the corn at 400°F / 200°C for 4 minutes. Transfer to a bowl and let it cool slightly for 1 minute.
- 3
In the same bowl, add the diced avocado, radishes, red onion, cilantro, crumbled fresh cheese, finely grated lime zest, and 2 tbsp lime juice.
- 4
Add the remaining 1/2 tbsp (8 ml) olive oil, smoked paprika, salt, and black pepper. Mix gently so the avocado keeps some texture.
- 5
Fill each lettuce leaf with the mixture, dividing the corn and cheese evenly.
- 6
Serve immediately to keep the contrast between the crunchy leaf, creamy filling, and warm smoky corn.
Chef tips
Dry the lettuce very well so the filling does not slide. For extra texture, reserve some of the corn to sprinkle on top at the end.
Substitutions
You can substitute the fresh cheese with crumbled feta for a stronger flavor. Cilantro can be swapped for fresh parsley. If you do not have lime, use lemon in the same amount.
