Instructions

  1. 1

Preheat the air fryer to 360°F / 180°C for 3 minutes.

  2. 2

Place each carrot between two chopsticks or wooden spoon handles and make thin cuts along the length without slicing all the way through, creating the hasselback effect.

  3. 3

In a bowl, mix 1 tablespoon olive oil, white miso, orange juice, orange zest, honey, garlic powder, and black pepper until smooth to make the glaze.

  4. 4

Brush the carrots with half of the glaze, making sure some gets into the slits. Reserve the remaining glaze.

  5. 5

Place the carrots in the air fryer basket in a single layer. Cook at 360°F / 180°C for 10 minutes.

  6. 6

Meanwhile, make the dukkah: finely chop the toasted pistachios and mix them with the sesame seeds, lightly crushed coriander seeds, ground cumin, salt, and the remaining tablespoon of olive oil.

  7. 7

Open the air fryer, carefully turn the carrots, and brush them with the remaining glaze. Cook again at 375°F / 190°C for 8 more minutes, or until tender inside and browned at the edges.

  8. 8

Spread the plain Greek yogurt onto a serving platter or individual plates. Arrange the hot carrots on top.

  9. 9

Sprinkle the pistachio dukkah over the carrots and finish with the chopped fresh mint. Serve immediately.

Chef tips

If your carrots are very thick, add 2 to 4 extra minutes of cooking at 375°F / 190°C. For cleaner cuts, use a small sharp knife. Do not overcrowd the basket so air can circulate properly.

Substitutions

You can swap the pistachios for almonds or hazelnuts if preferred. Greek yogurt can be replaced with unsweetened plant-based yogurt for a dairy-free version, and honey can be replaced with maple syrup for a strict vegetarian or vegan version if you also replace the yogurt.
