Instructions
- 1
Preheat the oven to 200 °C / 400 °F. Line a baking tray with parchment paper.
- 2
Lightly flour the work surface with the wheat flour. Unfold the puff pastry sheet and cut it into 12 even squares.
- 3
Place the chopped walnuts in a small skillet and toast over medium heat for 2 to 3 minutes, stirring often, until fragrant. Remove and let cool.
- 4
Arrange the pastry squares on the tray. Using a knife, score a 5 mm border around each square without cutting all the way through. Lightly prick the centers with a fork.
- 5
Brush the edges of each piece with the melted butter. Arrange the thin pear slices in the center, gently overlapping them into a fan shape.
- 6
Top the pear with the crumbled blue cheese, toasted walnuts, and fresh thyme leaves. Season with the optional salt and black pepper.
- 7
Bake for 18 to 22 minutes at 200 °C / 400 °F, or until the pastry is deeply puffed and golden and the pear is tender at the edges.
- 8
While they bake, warm the honey in a small saucepan or in the microwave for 10 to 15 seconds, just until loosened.
- 9
Remove the fans from the oven and let them rest for 3 minutes. Drizzle with the warm honey and serve hot or warm.
Chef tips
For an extra crisp finish, keep the puff pastry cold until assembly time. Slice the pear just before using so it does not oxidize too much.
Substitutions
You can swap the pear for a firm apple, the blue cheese for mild gorgonzola or goat cheese, and the walnuts for pecans or hazelnuts. For a less sweet finish, reduce the honey by half.
