Instructions

  1. 1

Season the flank steak with 1 teaspoon salt, 1/2 teaspoon black pepper, the sweet paprika, cumin, and dried oregano.

  2. 2

Heat a large pot over medium-high heat for 2 minutes. Add 1 tablespoon olive oil and sear the beef for 3 to 4 minutes per side until well browned.

  3. 3

Add half of the chopped onion, half of the chopped garlic, the tomato, and the bay leaf. Cook for 3 minutes, stirring. Pour in 480 ml (2 cups) water and 240 ml (1 cup) beef broth.

  4. 4

Once boiling, reduce to low heat, cover, and cook for 50 minutes, or until the beef is very tender and shreds easily. Remove the beef, shred it with two forks, and reserve 240 ml (1 cup) of the cooking liquid. Discard the bay leaf.

  5. 5

Meanwhile, preheat the oven to 180 °C / 350 °F. Toss the cashews with the brown sugar, 1 teaspoon lime zest, a pinch of salt, a pinch of pepper, and 1 teaspoon olive oil. Spread on a small tray and bake for 8 to 10 minutes, stirring halfway through, until toasted. Set aside.

  6. 6

In a medium saucepan, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add the remaining onion and cook for 3 minutes until translucent. Add half of the corn and cook 2 minutes more.

  7. 7

Stir in the rice and cook for 1 minute to lightly toast it. Pour in 480 ml (2 cups) beef broth and the coconut milk. Add 1/2 teaspoon salt. Bring to a boil, reduce to low, cover, and cook for 15 minutes.

  8. 8

Uncover the rice, add the remaining corn, 2 tablespoons lime juice, the remaining lime zest, and 1 tablespoon butter. Cook for 5 minutes more, stirring gently, until creamy and the rice is tender.

  9. 9

In a large skillet, heat the last tablespoon of olive oil over medium-high heat. Add the remaining garlic and cook for 30 seconds. Add the collards in batches with a pinch of salt and sauté for 3 to 4 minutes until softened but still vibrant. Finish with the remaining tablespoon of lime juice.

  10. 10

In the same skillet or in a small pot, combine the shredded beef with the reserved 240 ml (1 cup) cooking liquid. Cook over medium heat for 4 to 5 minutes until juicy and lightly glazed. Adjust with the remaining salt and pepper to taste.

  11. 11

Serve a base of creamy corn rice, top with the shredded beef, add the sautéed collards on the side, and finish with the toasted cashew crunch.

Chef tips

For an even creamier texture, stir the rice gently during the last minute of cooking. If the corn is especially sweet, balance it with a few extra drops of lime juice.

Substitutions

You can substitute flank steak with chuck roast or another braising cut. Collards can be replaced with kale. If you do not have cashews, use Brazil nuts or almonds, keeping in mind the flavor and allergen change.
