1. Preheat the oven to 190 °C / 375 °F and lightly grease a medium baking dish.
- 2
2. In a large bowl, combine the rolled oats, baking powder, ground cinnamon, and fine salt.
- 3
3. In another bowl, whisk together the milk, eggs, tahini, honey, and vanilla extract until smooth.
- 4
4. Stir the chopped dates into the wet mixture, then pour everything over the dry ingredients. Mix well and let it stand for 5 minutes so the oats begin to hydrate.
- 5
5. Transfer the mixture to the prepared dish and bake for 22 to 25 minutes at 190 °C / 375 °F, until the center is set and the top is lightly golden.
- 6
6. While it bakes, melt the butter in a skillet over medium heat. Add the pears and ground cardamom, and cook for 4 to 6 minutes, stirring gently, until the pears are tender but still hold their shape.
- 7
7. Add the sunflower seeds to the same skillet during the last minute to lightly toast them with the pears.
- 8
8. Remove the baked oatmeal from the oven and let it rest for 5 minutes. Top with the cardamom pears, toasted sunflower seeds, and sesame seeds before serving.
- 9
9. Serve warm, spooning any juices from the skillet over each portion.
Chef tips
For a creamier texture, let the oatmeal mixture rest for 10 minutes before baking. If you want a more golden top, place the dish under the broiler for 1 to 2 minutes at the end, watching closely.
Substitutions
You can substitute the honey with maple syrup. Pear can be swapped for firm apple, and sunflower seeds for pumpkin seeds. For a milder flavor, use 2 tablespoons of tahini instead of 3.
