Instructions
- 1
Preheat the oven to 220 °C / 425 °F and line a baking tray with parchment paper. Brush or spray the paper with the olive oil to prevent the sticks from sticking.
- 2
In a medium bowl, combine the grated halloumi, grated and lightly squeezed green apple, oats, all-purpose flour, beaten egg, 2 tablespoons of the chopped chives, garlic powder, black pepper, and a pinch of salt. Mix until you have a compact, moist mixture.
- 3
Let the mixture rest for 5 minutes so the oats can absorb some of the moisture from the apple and egg.
- 4
With lightly damp hands, divide the mixture into 12 portions and shape them into short, thick sticks. Place them on the prepared tray, leaving a little space between each one.
- 5
Bake at 220 °C / 425 °F for 10 minutes. Remove the tray, carefully turn the sticks, and bake for 8 to 10 minutes more, until deeply golden around the edges and firm to the touch.
- 6
While they bake, make the dip by stirring together the Greek yogurt, Dijon mustard, lemon juice, honey, the remaining tablespoon of chives, and a pinch of salt in a small bowl. Mix until smooth and creamy.
- 7
Let the sticks rest for 2 minutes after baking so they set slightly. Serve hot or warm with the mild mustard chive dip.
Chef tips
If the apple releases a lot of moisture, squeeze it well before mixing so the sticks hold their shape. For an extra crisp finish, switch on the broiler for the last 1 to 2 minutes, watching closely.
Substitutions
You can replace the green apple with grated firm pear. Chives can be swapped for fresh parsley. If you do not have Greek yogurt, use thick plain yogurt instead.
