Instructions
- 1
Preheat the oven to 220 °C / 425 °F. Line a baking tray with parchment paper. Toss the diced sweet potato with 1/2 tablespoon olive oil and a pinch of salt, then roast for 20 minutes until tender.
- 2
Transfer the roasted sweet potato to a large bowl and mash it into a thick puree. Let it cool for 5 minutes so it does not cook the egg when mixed.
- 3
Add the goat cheese, 1/2 cup of the breadcrumbs, grated Parmesan, the beaten egg, half of the chopped chives, garlic powder, sweet paprika, 1/2 teaspoon salt, and black pepper to the bowl. Mix well until a shapeable dough forms.
- 4
In a shallow dish, combine the remaining breadcrumbs with the sesame seeds. With lightly oiled hands, shape the sweet potato mixture into small sticks and coat them in the breadcrumb-sesame mixture.
- 5
Arrange the sticks on the tray, brush or drizzle them with the remaining olive oil, and bake at 220 °C / 425 °F for 15 minutes. Turn them carefully and bake for 8 to 10 minutes more, until golden and crisp.
- 6
While they bake, make the dip by stirring together the Greek yogurt, lime juice and zest, honey, the remaining chives, and a pinch of salt in a bowl until creamy.
- 7
Serve the sticks hot with the yogurt, lime, and chive dip on the side.
Chef tips
If the mixture feels too soft, chill it for 15 minutes before shaping the sticks. For deeper color, finish with 1 to 2 minutes under the broiler, watching closely.
Substitutions
You can replace the goat cheese with crumbled feta or well-drained ricotta. Chives can be swapped for fresh parsley, and lime for lemon.
