Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F and line a baking tray with parchment paper. Cut the eggplant into evenly sized batons.

  2. 2

Place the eggplant batons in a colander or on a tray, sprinkle with the fine salt, and let them rest for 10 minutes to release some moisture. Pat them dry well with paper towels.

  3. 3

In a bowl, mix the panko breadcrumbs, grated Parmesan cheese, smoked paprika, garlic powder, and black pepper.

  4. 4

Place the all-purpose flour on one plate. Put the beaten egg on another plate. Coat each eggplant baton first in flour, then in egg, and finally in the panko-Parmesan mixture, pressing lightly so it adheres.

  5. 5

Arrange the coated batons on the prepared tray and brush or spray them with olive oil. Bake for 20 to 25 minutes at 220 °C / 425 °F, turning halfway through, until golden and crisp.

  6. 6

Meanwhile, make the cream by mixing the plain Greek yogurt, white miso, and lemon juice in a bowl until smooth.

  7. 7

In a small bowl, stir together the honey and red pepper flakes.

  8. 8

Serve the eggplant batons hot on a platter, with the miso yogurt cream alongside, drizzle with the spicy honey, and finish with the chopped fresh chives.

Chef tips

For extra texture, leave the batons under the oven broiler for 2 more minutes at the end, watching closely so they do not burn. If the eggplant is very large, remove some of the seeds so the batons stay firmer.

Substitutions

You can substitute Parmesan with Pecorino for a stronger flavor. Chives can be replaced with very thinly sliced scallion. If you do not have panko, use coarse breadcrumbs, though the result will be slightly less airy.
