Instructions

  1. 1

Preheat the oven to 220°C / 425°F. Line a baking tray with parchment paper and set aside.

  2. 2

Cook the cauliflower in boiling water with 1/2 teaspoon of salt for 5 minutes, until just tender. Drain very well, let it cool for 5 minutes, and finely chop it.

  3. 3

Transfer the chopped cauliflower to a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step helps the bites stay compact and crispy.

  4. 4

In a large bowl, mix the drained cauliflower, grated cheddar, 40 g breadcrumbs, the beaten egg, chives, garlic powder, sweet paprika, wheat flour, the remaining 1/2 teaspoon salt, and black pepper.

  5. 5

Shape the mixture into 12 small bites, pressing firmly with your hands. Place the remaining breadcrumbs on a plate and lightly coat each bite.

  6. 6

Arrange the bites on the prepared tray, brush or drizzle them with 1 tablespoon olive oil, and bake for 18 minutes at 220°C / 425°F. Carefully flip them, add the remaining 1 tablespoon olive oil, and bake for 8 more minutes until deeply golden.

  7. 7

While they bake, place the diced apple on a small tray or baking dish, toss with a pinch of salt, and roast in the oven at 220°C / 425°F for 12 minutes, until soft and lightly caramelized.

  8. 8

Blend the roasted apple with the Greek yogurt, mild mustard, honey, and lemon juice until creamy. If you prefer it warm, heat it for 1 minute over very low heat without letting it boil.

  9. 9

Serve the crispy bites hot with the warm roasted apple mustard dip.

Chef tips

Squeeze the cauliflower very well to avoid a wet mixture. For an extra crispy finish, leave the bites in the oven for 2 additional minutes at the end, watching closely so they do not burn.

Substitutions

You can swap the cheddar for aged gouda or another flavorful semi-hard cheese. Chives can be replaced with finely chopped parsley, and the red apple can be swapped for firm pear for a milder dip.
