Instructions

  1. 1

    Preheat the oven to 200 °C / 400 °F.

  2. 2

Arrange the baguette slices on a baking sheet. Brush them with 1 tablespoon olive oil and bake for 6 to 8 minutes at 200 °C / 400 °F until golden and crisp. Set aside.

  3. 3

Place the figs cut side up on another baking sheet or oven-safe dish. Drizzle with the remaining 1 tablespoon olive oil, 1 tablespoon honey, 1 teaspoon thyme, 1/4 teaspoon salt, and the black pepper.

  4. 4

Roast the figs at 200 °C / 400 °F for 8 to 10 minutes, until softened and lightly caramelized around the edges. Remove and let cool for 5 minutes.

  5. 5

Meanwhile, whip the goat cheese with the Greek yogurt, lemon zest, and the remaining 1/4 teaspoon salt until light and spreadable.

  6. 6

In a small bowl, mix the remaining 1 tablespoon honey with the remaining 1 teaspoon thyme.

  7. 7

Assemble each bite by spreading a small amount of whipped goat cheese mixture onto each baguette toast.

  8. 8

Top each toast with one roasted fig half.

  9. 9

Finish with chopped pistachios and a drizzle of thyme honey over each bite. Serve warm or at room temperature.

Chef tips

If the figs are very ripe, roast them in a dish to catch their juices and spoon those over the toasts as well. Lightly toast the pistachios in a skillet for 2 to 3 minutes to deepen their flavor.

Substitutions

You can swap the goat cheese for cream cheese or thick ricotta. Thyme can be replaced with very finely chopped rosemary. For a gluten-free version, use gluten-free bread or crackers.
