Instructions
- 1
Preheat the oven to 180 °C / 350 °F and line a baking tray with parchment paper.
- 2
In a small bowl, mix the sesame seeds with 15 ml honey, 1 teaspoon lemon juice, and a pinch of salt until lightly sticky.
- 3
Make 16 small mounds of the mixture on the tray and flatten them with the back of a spoon to form thin 4 cm discs.
- 4
Bake the sesame discs for 6 to 8 minutes at 180 °C / 350 °F, until golden. Let them cool completely on the tray so they become crisp.
- 5
Meanwhile, whip the goat cheese with the Greek yogurt, the remaining lemon juice, and a pinch of salt until smooth and airy.
- 6
Cut the pear into 16 small, even cubes.
- 7
Heat a skillet over medium heat and melt the butter. Add the pear, the remaining honey, and cook for 3 to 4 minutes, stirring gently, until the fruit is glossy and lightly caramelized.
- 8
Remove the skillet from the heat and add half of the fresh thyme and the crushed pink peppercorns. Let cool for 5 minutes.
- 9
Place a small dollop of whipped goat cheese on each sesame crisp.
- 10
Top each base with a cube of caramelized pear and finish with the remaining fresh thyme. Serve immediately to keep the crisps crunchy.
Chef tips
For a cleaner presentation, use a piping bag to add the cream. If the crisps soften, return them to the oven for 1 to 2 minutes at 160 °C / 325 °F and cool again before assembling.
Substitutions
You can replace the pear with a firm apple. Goat cheese can be swapped for cream cheese for a milder flavor, and thyme can be replaced with very finely chopped rosemary in a small amount.
