Instructions

  1. 1

Preheat the oven to 220°C / 425°F. Pat the chickpeas very dry with paper towels and place them on a sheet pan. Toss them with 1 tablespoon olive oil, ground cumin, smoked paprika, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.

  2. 2

Roast the chickpeas for 20 to 25 minutes at 220°C / 425°F, stirring halfway through, until golden and crispy.

  3. 3

Meanwhile, make the quick-pickled onion: place the red onion in a small bowl with the red wine vinegar, 1 tablespoon lime juice, and a pinch of salt. Toss and let it rest for 15 minutes.

  4. 4

For the sauce, whisk together the tahini, remaining lime juice, maple syrup, 3 tablespoons water, a pinch of salt, and a little black pepper in a bowl until creamy and pourable.

  5. 5

Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the minced garlic and cook for 30 seconds, without letting it brown too much.

  6. 6

Add the riced cauliflower to the skillet with the garlic. Season with the remaining salt and a bit more black pepper. Cook for 6 to 8 minutes, stirring, until tender but still fluffy.

  7. 7

Remove the skillet from the heat and add half of the fresh cilantro to the cauliflower. Mix well.

  8. 8

Divide the cauliflower rice among 4 bowls. Top with the crispy chickpeas, cucumber, cherry tomatoes, and quick-pickled red onion.

  9. 9

Finish each bowl with the tahini-lime sauce and the remaining fresh cilantro. Serve immediately to keep the contrast between warm and crisp textures.

Chef tips

Drying the chickpeas well is the key to getting them crispy. If you want even more texture, let the chickpeas rest for 5 minutes out of the oven before serving.

Substitutions

You can swap the cilantro for parsley. Red wine vinegar can be replaced with apple cider vinegar. If you do not have lime, use lemon in the sauce and for the pickled onion.
