Instructions

  1. 1

    1. In a small bowl, combine the red onion with 2 tablespoons (30 ml) red wine vinegar, 2 tablespoons (30 ml) water, 1/4 teaspoon salt, and the honey. Stir well and let it sit for 15 minutes while you prepare the rest.

  2. 2

    2. Preheat the oven to 425°F (220°C). Place the green beans on a sheet pan, add 1 tablespoon (15 ml) olive oil, 1 grated garlic clove, 1/2 teaspoon smoked paprika, a pinch of salt, and black pepper. Toss and roast for 12 to 15 minutes at 425°F (220°C), until blistered at the edges but still tender.

  3. 3

    3. Meanwhile, make the mild romesco. In a blender or food processor, combine the roasted red pepper, toasted almonds, 2 garlic cloves, tomato paste, 1 tablespoon (15 ml) red wine vinegar, 2 tablespoons (30 ml) olive oil, 1 1/2 teaspoons smoked paprika, cumin, 1 tablespoon (15 ml) lemon juice, 60 to 120 ml (1/4 to 1/2 cup) vegetable broth or water, 1/2 teaspoon salt, and black pepper. Blend until creamy and smooth.

  4. 4

    4. Season the turkey strips with lemon zest, 1/2 teaspoon salt, black pepper, and the red pepper flakes if using. Heat a large skillet over medium-high heat and add 1 tablespoon (15 ml) olive oil. Sear the turkey for 5 to 7 minutes, stirring, until fully cooked and it reaches a safe internal temperature of 165°F (74°C).

  5. 5

    5. Reduce the heat to medium and add the romesco sauce to the skillet with the turkey. Cook for 2 to 3 minutes, stirring, until the turkey is well coated and the sauce thickens slightly. Add an extra splash of broth or water if needed to loosen it.

  6. 6

    6. In another bowl, combine the cooked jasmine rice with the remaining fresh parsley, 1 tablespoon (15 ml) olive oil, 1 tablespoon (15 ml) lemon juice, and a pinch of salt. Toss until the rice is fluffy and fragrant.

  7. 7

    7. Divide the parsley rice among 4 bowls. Top with the romesco turkey, blistered green beans, and drained quick-pickled red onion. Finish with a little extra black pepper if desired and serve warm.

Chef tips

For deeper flavor, you can roast the red pepper at home until the skin is lightly charred, then peel it. The rice works best when warm and fluffy, not overly wet.

Substitutions

You can swap the turkey for sliced chicken breast. Almonds can be replaced with hazelnuts for a deeper flavor profile. If you do not have jasmine rice, use basmati rice or cooked brown rice.
