Instructions

1. Place the red onion in a bowl with 30 ml (2 tbsp) lime juice and 2 g (1/4 tsp) salt. Massage lightly and let it rest for 15 minutes. Then mix with half of the chopped cilantro and set aside as a pickle.
- 2
2. Cook the yuca in a pot with enough water for 20 to 25 minutes, until very tender. Drain, remove the fibrous core if needed, and keep warm.
- 3
3. Meanwhile, heat a skillet over medium heat and toast the corn kernels with 5 ml (1 tsp) vegetable oil and a pinch of salt for 6 to 8 minutes, stirring until lightly golden. Set aside.
- 4
4. In a blender, process the roasted peanuts with the milk and 250 ml (1 cup) of the fish stock or water until smooth. Set aside.
- 5
5. Season the corvina with 4 g (3/4 tsp) salt, black pepper, and half of the ground cumin.
- 6
6. Heat a cazuela or wide skillet with the annatto oil over medium heat. Sear the corvina for 2 minutes per side, just until sealed. Remove and reserve.
- 7
7. In the same pan, add the remaining vegetable oil and sauté the garlic, red bell pepper, and tomato for 4 to 5 minutes. Add the remaining cumin and cook 1 minute more.
- 8
8. Add the cooked yuca, the rest of the fish stock or water, and the blended peanut mixture. Cook over medium-low heat for 8 to 10 minutes, stirring often so it does not stick. Adjust with the remaining salt.
- 9
9. Using a wooden spoon, mash part of the yuca in the pot to create a creamy, thick texture, leaving some larger pieces intact.
- 10
10. Return the corvina to the cazuela, cover, and cook over low heat for 6 to 8 minutes more, until the fish is cooked through and flakes easily. If you prefer to finish it in the oven, bake the covered cazuela at 180 °C / 350 °F for 10 minutes.
- 11
11. Add the remaining lime juice and the rest of the cilantro. Stir gently without breaking up the fish too much.
- 12
12. Serve the cazuela hot with the toasted corn on top and finish with the pickled red onion.
Chef tips
If the sauce becomes too thick, add a little more hot stock. For deeper flavor, toast the peanuts a few extra minutes before blending.
Substitutions
You can use grouper, tilapia, or trout instead of corvina. If Andean corn is unavailable, use sweet yellow corn. For a dairy-free version, replace the milk with unsweetened plant-based milk or more stock.
