Instructions

1. Toss the pork with 1/2 teaspoon salt, black pepper, and smoked paprika. Let it rest for 10 minutes while you prepare the remaining ingredients.
- 2
2. In a bowl, combine the soy sauce, lime juice, honey, and grated ginger. Stir well and set this sauce aside.
- 3
3. Turn on the Instant Pot to Sauté. Once the insert is hot, add the vegetable oil and brown the pork in 2 batches for 2 to 3 minutes per batch, until lightly colored. Transfer the pork to a plate.
- 4
4. Add the onion and garlic to the insert. Sauté for 2 minutes, stirring, until the onion softens. Pour in the reserved sauce and scrape the bottom to release any caramelized bits.
- 5
5. Return the pork to the Instant Pot and coat well with the sauce. Set a pressure-safe trivet or rack on top.
- 6
6. In a pressure-safe bowl, combine the jasmine rice, coconut milk, water, and the remaining 1/4 teaspoon salt. Place the bowl on the trivet so the rice cooks above the pork.
- 7
7. Lock the lid and cook on High Pressure for 12 minutes. Let the pressure release naturally for 10 minutes, then carefully quick-release the remaining pressure.
- 8
8. Meanwhile, spread the pineapple on a tray and roast it in a preheated oven at 425°F / 220°C for 10 minutes, or until the edges are golden. If preferred, sear it in a very hot skillet for 3 to 4 minutes instead.
- 9
9. Open the Instant Pot, carefully remove the rice bowl, and fluff the coconut rice with a fork. Remove the trivet.
- 10
10. Stir the sesame oil into the pork. If you want a more concentrated sauce, switch to Sauté and simmer for 2 to 3 minutes to reduce slightly.
- 11
11. Serve a base of coconut rice, spoon the pork and sauce over it, and finish with the roasted pineapple, scallion, sesame seeds, and fresh cilantro.
- 12
12. Taste and adjust with additional salt if needed before serving hot.
Chef tips
For better browning, pat the pork dry before sautéing. Do not overcrowd the insert while browning so the meat colors instead of steaming. The roasted pineapple adds contrast and texture, so add it at the end to keep it vibrant.
Substitutions
You can use boneless chicken thighs instead of pork, adjusting the pressure cooking time to 10 minutes. Basmati rice works well in place of jasmine rice. Cilantro can be replaced with fresh mint, and honey with brown sugar if you prefer a toastier flavor profile.
